Actually I can't remember the last time I cooked with tamarind ,need to buy more, but I had an amazing Hung Lay curry at a Thai restaurant that I'll never forget.
Forgot to mention, I've had mahleb on my online shopping list recently and your comment to replace almond extract with mahleb sealed the deal! I'm a recovering alcoholic and prefer not to keep alcoholic anything at home (I know NA extracts exist, but a spice just sounds yummier).
Glad to hear that! Once I discovered Mahleb I completely stopped using almond extract. Sure, the flavours are not identical but I also much preferred using a spice over a flavour extract.
