Sophia, this cheesecake sounds delicious. Do you think I can use chia seeds instead of eggs? I don’t do so well with eggs these days

Thank you Annada! I am no expert when it comes to egg-free baking but I know some folks have success in replacing each egg with 1 tbsp cornstarch and 3 tbsp water in cheesecakes so you could try that.

I hope you are getting some rest and recovering. Before I even got to the cheesecake recipe, I was struck by the Pomegran-ade. I actually have pomegranate molasses on hand and never thought to use it this way. I’ll try it tomorrow. Thank you! Now onto the cheesecake recipe! :)

Thank you Sally, I am so hopefully I will be back on my feet before I know it.

As for the Pomegranate-ade I discovered this by accident as a kid - I love tart cherry juice and the flavour of pomegranate molasses reminded me of that so I just tried mixing it with water one day and it is so delicious. I hope you enjoy it as much as I do!
