Thank you Annada! I am no expert when it comes to egg-free baking but I know some folks have success in replacing each egg with 1 tbsp cornstarch and 3 tbsp water in cheesecakes so you could try that.

As for the Pomegranate-ade I discovered this by accident as a kid - I love tart cherry juice and the flavour of pomegranate molasses reminded me of that so I just tried mixing it with water one day and it is so delicious. I hope you enjoy it as much as I do!
Sophia, this cheesecake sounds delicious. Do you think I can use chia seeds instead of eggs? I don’t do so well with eggs these days
