Where do I start? I always grow herbs in pots in my little backyard, so I stick them into so many summer bakes. I love to pair strawberry and tarragon (I turned that combo into ice cream last summer) I'm obsessed with lemon verbena, which I use fresh and dried in cookies, whipped creams, and more. I love to steep dried fruit in tea or use ground tea in shortbread. I may have made an herb-garden-themed pie tower on a TV baking show!

Tea is one of my favourite ingredients in baking, there are so many flavours. I sometimes grind the tea leaves and include them rather than using an infusion. And lapsang souchong should be used far more often!

Same here - using teas and herbal infusions is such a neat way to use what you probably already have at home to add flavour! And yes, some teas I tend to use ground as well - like Hojicha for example. And yes, Lapsang Souchong is incredible!

Ooooh, I have to try that strawberry tarragon combo - still have some strawberries and tarragon simply syrup in the fridge from some tarragon soda experiments. And yes, I hear you on the lemon verbena - my mum uses it a lot in desserts as well (she has a big plant in her garden). That herb garden pie tower sounds incredible - will have to see if I can find the episode to watch!
