Imagine these but in roll form! -a la cinnamon rolls, sans the cinnamon! Or with saffron in the dough and a rose water glaze👀 Also sounds delicious just the way it is!!

Same, I love a sweet breakfast even if I am slowly starting to transition to a savoury breakfast as I hear it's better for us.
And yes, I think you could easily make it dairy-free and could no doubt try making it glutenfree as well.

I’m sure they would work great as rolls! Maybe even with some citrussy cream cheese frosting on top! And yes to saffron in the dough!
